 Isolated soy protein, as a high-quality plant protein, plays a vital role in meat processing. In recent years, improving the functional properties of isolated soy protein through various methods, such as enzyme blending, physical and enzyme combined modification, and chemical and enzyme combined modification, has become an important research direction for expanding its application in meat products.

Applications in Cut Meat Products

Cut meat products mainly refer to large or whole pieces of meat, which are prone to integrity loss during processing. Adding modified isolated soy protein can effectively reduce dehydration shrinkage, improve tissue characteristics, and enhance product quality. For small cuts of meat no more than 6 cm thick, isolated soy protein can be evenly incorporated through tumbling; for larger cuts, injection technology can be used, dissolving modified isolated soy protein in brine and injecting it into the meat. This injection method not only ensures even distribution of the marinade within the meat, shortening marinating time, but also increases product yield. Modified isolated soy protein, with its excellent water-holding and gelling properties, effectively maintains the appearance and moisture of meat chunks. Simultaneously, its natural antioxidant properties can be used as a coating material to slow down the oxidation process, extending shelf life while maintaining the sensory quality of the product.

Applications in Ground Meat Products: Ground meat products include meat patties, meatballs, and fish paste products. The key to these products lies in the stable meat paste system formed by lean and fat. Isolated soy protein has excellent water and oil absorption properties, effectively binding lean and fat together, enhancing both nutritional value and product yield.
